When I see this recipe card — which I treasure in my mom's handwriting — I immediately envision my Grandma Syble (who the great-grandkids renamed GiGi) standing at her cooktop, filling canning jars, and tinkering around the kitchen while I sat at her dining table listening to and absorbing every word she said.

I also remember that Grandma Syble's friends at the bank where she worked as a teller felt cherished every time she gifted them with a cute jar of her pickled peaches, usually decorated with a scrap of fabric and a ribbon tied in a bow around the canning ring. That's a tradition I love to carry on!

Ingredients

• 1 quart Vinegar

• 6 pounds Sugar

• 12 pounds Peaches

Spice Bag

• 1 Tbsp Ground Cloves

• 1 piece Ginger Root

• 4 to 5 sticks Cinnamon

Directions

1. Make a syrup of vinegar and sugar in a large stock pot.

2. Add spice bag made from ground cloves, ginger root, and cinnamon sticks.

3. Stir in fruit.

4. Cook until peaches are tender.

5. Let stand and soak while preparing containers.

6. Spoon fruit into jars or containers.

7. Fill remaining space with syrup.

8. Seal containers. Process jars if canning for extended storage. If not preserved with water bath, refrigerate for up to one week.

Recipe Note

These peaches are fabulous served over hot or cold ham, with ice cream or cottage cheese, or simply by themselves!
